If I were to write an ode to vegetables I guess the title would be “Ratatouille” . Why?! Because this is the only dish that cames to my mind when thinking of veggies and their freshness. A symphony of colours and flavors in a single healthy dish prepared from the simplest ingredients. Imagine a vegetable garden bathed in the dew of a summer morning – this is what I see in a dish of Ratatouille.
Ingredients:
- 1 aubergine
- 2 courgettes
- 1 red capsicum
- 1 shallot
- 1 carrot
- 10 cherry tomatoes
- 1 bay leaf
- 3 springs of thyme
- 3 cloves of garlic
- 100 ml white wine
- salt – to taste
- pepper – to taste
- peperoncino – to taste
- 3tbs olive oil (evo)
- fresh basil leaves
Instructions:
- Clean, wash and cut vegetables as desired
- Heat the olive oil in a large pot, frye the shallot and a crushed clove of garlic, stirring for a few minutes
- Add the carrot and stir until soft
- Add the diced aubergine and capsicum, pour the wine and sauté until alcohol evaporates
- Add the diced zucchini and stir gently
- Add the tomatoes and herbs, cover and allow to simmer for few minutes
- Season with salt, pepper and a pinch of peperoncino, add the remaining garlic, remove from the heat and let sit, covered for a few more minutes
Serve with couscous and basil
