” La torta della salute”- this was written on the stylish note next to the the carrot cake the day when, taking advantage of some away of the stress of the office, my friend and I decided to treat ourselves starting the day at California Bakery, breakfast that was the start of a long shopping day on the streets of a crowded Milan bathed in the spring sun. I must confess I prefer the city in a normal day (as only the lucky one could afford shopping session on a Tuesday) when, although busy, it seems quieter. People in a hurry towards an office full of papers, reports, meetings , decisions and calls, some lost tourist, almost empty shops without infernal queues in changing rooms, calm and smiling shopping assistants. This is exactly what you need not to abandon your shopping initiative.
But back to the healthy cake we were talking about. A very good looking cake was posing next to her sisters coming straight from the American tradition. I always have a hard time to choose when I see so many delicious goodies together: cupcakes, cheesecake with fruit and without, with chocolate and walnuts, pancakes with maple syrup, chocolate chips in large glass jars, tarte tatin, apple cake, muffins, scones, brownies, plumcakes, waffles, citrus poppy seeds, brownies etc. The smell of fresh American coffee. You tell me now! How?! How?!?! How could it be easy to choose?
Despite the note, when I ordered, I ignored the carrot cake. I thought I couldn’t like it. So I chose one with apples, cinnamon and walnuts with a large glass of latte macchiato, to start the day properly. My friend ordered her healthy Carrot Cake. Seeing her smile of satisfaction while eating the “healthy” cake and occasionally hearing “mmmm, mmmm …. this cake is so good, it is real good” … I couldn’t resist anymore and I had to taste it. I can only say that even if my apple cake was “wow”, at that moment I felt sorry for not having ordered the carrot cake: it was very fragrant, fluffy and light, not too sweet. It was really good. I left that place thinking “I need to bake a carrot cake myself” although I had no idea how.
But I was lucky because Corina @ Pofta vine gătind this month for Bucătar Curajos invited us to prepare a Carrot cake So I prepared the cake earlier than I thought, inspired by Corina’s recipe that I slightly modified by adding to the basic ingredients and carrots
fresh ananas
and pecan nuts
The result? Disturbingly delicious
Ingredients:
Cake
- 3 eggs
- 160g brown sugar
- a pinch of salt
- 85ml oil
- 250g carrots (grated)
- 100g pecan nuts (chopped)
- 125g flour
- 2ts baking powder
- 1ts cinnamon
- 150g ananas (diced)
- 1ts vanilla extract
- 50g raisins
- 30ml Amaretto
Frosting
- 200g Philadelphia cream cheese
- 50g butter
- 100g confectioners’ sugar
- vanilla extract
- pecan nuts
Instructions:
Cake
- Preheat the oven to 180°C and grease a baking pan with butter
- Let the raisins hydrate in Amaretto
- In a bowl sift the flour and mix it with the chopped nuts, cinnamon, baking powder and salt
- Beat the sugar, oil and eggs together until light yellow. Add the vanilla
- Add the dry ingredients to the wet ingredients; add the carrots, diced pineapple and raisins to the batter and mix well
- Pour the batter into the greased baking pan and bake for cca 50-60′ or until a toothpick come out clean
- Let the cake cool completely before adding the frosting.
Frosting
Mix the cream cheese, butter and vanilla until combined. Add the sugar and mix until smooth.
Spread the frosting onto the cold cake and decorate with pecan nuts or diced pineapple.
I love cakes but this is one of the best I’ve ever made.
A mix of flavors and freshness wrap your senses in a slow dance and pampers you notes of nuts slightly flavored with the sour scent of fresh pineapple and cinnamon which gives this cake a particular charm.

It was very appreciated and it will soon come back in DD kitchen. My friend said that it was tastier than the one she had that spring morning in that place we love at the beginning of a long day of shopping
All you have to do to convince yourself is to try it! It is worth it!

Și eu sunt reticentă în privința prăjiturilor cu morcovi, nu știu de ce. Îi prefer cruzi, până una alta. Arată sănătoasă prăjitura ta:).
Alina, incearca o praji cu morcovi si nu iti va parea rau. Eu nu stiu de ce n-am facuto pana acum ;).

Va trebui doar sa reduci timpul de coacere dat fiind faptul ca in formele de muffins o sa ai cantitate mai mica, deci se vor coace mai repede. Cu toppingul de branza, eventual turnat cu ajutorul unui sac à poche cred ca ai obtine o frumusete de cupcakes. Sa-mi spui cum au iesit ;). Multumesc de vizita si te mai astept cu drag.
