As Santa was very kind last Christmas and he brought me Gordon Ramsay’s Sunday Lunch and Other Recipes from the “F word” I thought it was the right moment to start the long “to do list” with the amazingly delicious Cherry and Almonds Clafoutis
Ingredients:(serves 6 or 4)
50g ground almonds
15g all purpose flour
1 pinch of salt
100g caster sugar
butter for the baking dishes – confectioners’ sugar
300 g pitted cherries
Mix the dry ingredients in a bowl and then mix the wet ingredients together. Combine them into a rather loose batter. You can let the batter rest over the night or you can use it straight away. Heat the oven at 190°C. Grease 6 of 4 baking dishes. Place the cherries in the baking dishes
and sift over some powdered sugar.
Cover with the batter.
Introduce the baking dishes in the oven.
Bake for 25-30′ until golden brown.
Let the Clafoutis rest for 5-10′
make them more beautiful with some powedered sugar and enjoy the most delicious clafoutis ever.
