I dont’t really know what happened but I haven’t done too many sweets lately. But this weekend I was inspired by Emily’s invitation to her Tea Party hence I prepared some biscuits whic I want to share with you.
As the theme for this edition is English Tea I couldn’t go without something suitable five o’clock tea. That is why I chose to prepare some mini shortbread, crispy and full of flavor.
- 200g butter
- 70g brown sugar
- 30g honey
- 250g flour
- 1/2tbs salt
- vanilla extract
- 100g dried blueberries
- 100g pistacchio
Preheat the oven to 180°C
Cream together the butter with the sugar, honey and vanilla until light and fluffy. Add the flour and salt and mix well. You shouldn’t use the mixer for this operation to avoid tough cookies. If you choose to use it, use it at low speed.
Stir in the blueberries and pistachio.
Bring the dough together in a ball. Roll it out between two sheets of baking paper until it’s 0.5 cm.
Refrigerate for 15′ then shape your cookies. I prepared some square cookies and some heart shaped as Valentine’s Day is coming ;).
Bake the cookies on a tray covered with baking paper for 18-20′ or until they become light brown.
Let them completely cool before storing.
The cookies are crispy and flavored but not tough. The blueberry flavor matches the pistachio perfectly.
They are perfect for a tea party, breakfast or just a healthy snack.
