Zucchini! Who doesn’t like zucchini? Those happy and delicate vegetables that bring freshness and joy to our tables. How can someone not like zucchini?
If you like zucchini as much as I do, I share with you this delicious recipe we like very much: crispy zucchini, slightly smoked cheese and prosciutto cotto with a scent of fresh thyme and bay leaves and a note of crispy pistachio.
- 6 medium zucchini
- 200g prosciutto cotto (sliced)
- 200g smoked provola
- 30g ground pistachio
- 80g grated parmesan
- 4tbs olive oil (evo)
- fresh thyme
- 2 bay leaves
- salt to taste
- pepper to taste
- 2 cloves of garlic
- Wash the zucchini, trim and discard the ends and slice them lengthwise with a mandolin. Season with salt. Wash the thyme and bay leaves. Remove the smoked rind of the provola and slice the cheese. Clean the garlic.
- In a pan heat two tbs of oil with the garlic. Add zucchini slices and sauté them for 3-4′.
- Grease with oil a non stik baking pan and put the bay leaves onto the bottom of the pan. Place a layer of zucchini, season with salt, add few slices of prosciutto , few slices of provola and Parmesan cheese. Continue alternating the layers ending with zucchini slices placed in a latticework (criss-cross) pattern. Add some Parmesan cheese , ground pistachio, thyme leaves and drizzle with the remaining olive oil.
Transfer the baking pan in the pre heated oven at 180° and bake for 15′.
Let it cool a bit before serving.
Serve it warm.
