September is full of surprises and full of colour. In my opinion September is the most beautiful month of the year. A mix of colours and flavors, of memories and dreams. A month of nostalgia full of goodies. How wonderful can be the autumn sunny mornings wandering through the crowded market! Seedless white grapes full of flavor ready to become a sauce for a duck breast, fresh porcini mushrooms which reminds you of a great risotto, happy pumpkins that tempt you with the thought of a cream soup or an autumn risotto and the figs…oh, the adorable figs, delicate and precious I cannot get enough of.
This time I was really lucky because a colleague of mine brought me some fresh figs from her tree. Such a delight: I honestly think they were by far the best and most fragrant figs that I’ve ever eaten. And luck was on my side because there were enough to indulge my every whim. And I didn’t hesitate to spoil myself with a delicate autumn salad.
Ingredients:
- 1 pear
- 6 figs
- 100g white grapes
- 150g baby mozzarella
- 150g speck
- 10g hazelnuts
- 20g almond flakes
- 10g pistachio
- 10ml lemon juice
Dressing
- 20ml olive oil (evo)
- 20ml lime juice
- a pinch of Persian Blue Salt
Instructions:
- Wash and dry the pear
- Slice it lengthwise into four, remove the spine and seeds, put the pear slices in a bowl and sprinkle with lemon juice
- Wash and dry the grape
- Clean the figs with moist paper towel,remove the stem and cut each fig into four
- Prepare the dressing by mixing olive oil with lime juice and salt
- Compose the salad: put the pear slices like a fan on a large plate, add grapes and figs. Place the slices of speck (rolled up) and the mozzarella on top
Sprinkle with hazelnuts, pistachio and almond flakes and drizzle the dressing on top
