This month Provocarea secreta organized by Laura Mimmi@ Bucate pe alese gave me the opportunity to rummage through the Mansarda cu bunatati where I found a lot of goodies on my taste. It was not very easy to choose but as I’d been having Latkes on my “to do” list for some time, the Pancakes cu cartofi (Potatoe Pancakes) recipe winked at me and it proved to be the winner. I made some changes to the recipe found in the attic, I chose to bake the latkes instead of frying them and the result was darn good.
Ingredients:
- 4 potatoes
-2 eggs
- 2tbs of parmesan
- 2tbs flour
- 2 garlic cloves
- 1tbs evo
- fresh thyme
- chives
- Persian blue salt
- peppercorn
-100 smoked salmon
Instructions:
Preheat the oven to 220°C.
Peel the potatoes, grate them, squeeze them well to remove the water and put them in a big bowl. Chop the chives and add it to the grated potatoes along with some fresh leaves of thyme, mashed garlic and Parmesan. In another bowl beat eggs, add flour and olive oil. Pour over the potatoes and mix well to obtain a homogeneous composition. Season to taste with salt and pepper.
Put baking paper on a tray and brush it with olive oil.
Place tablespoon of the potato mixture on the greased baking sheet. Bake the latkes for 30′ ( 15′ each part) or until they become golden brown.
Meanwhile prepare the Yogurt sauce
Ingredients:
- 170 Greek yogurt light
- 1tbs evo
- dill
- chives
- 1/2 lime juice
- Persian blue salt
- peppercon
Instructions:
Combine yogurt with olive oil and lime juice. Add the chopped chives and dill. Season with salt and pepper to taste. That’s all
Serve the latkes with yogurt sauce and smoked salmon. We loved them and I am sure they will be prepared again soon in the DD kitchen. It is odd though if I think of a similar dish my grandma used to prepare which I wouldn’t eat as a child.
