As someone asked for an English version of the German Baked Potatoes recipe , here it is:
- 4 medium potatoes
- 160g Philadelphia light
- 100ml Greek yogurt
- 1 tbs olive oil
- Camargue salt
- fresh dill
- fresh chives
Preheat the oven at 200° C.
Wash the potatoes and prick them with the tines a fork; place the potatoes on a backing sheet and bake them in the hot oven for 45′-50′ ( depending on the size of the potatoes).
Meanwhile prepare the cheese: mix the Philly with the yogurt; add the oil and the chopped herbs.
Add salt and pepper and wait patiently for your potatoes to bake.
When baked, remove from the oven and cool slightly.
Split baked potatoes and fluff with a fork to make it easier for the cheese to penetrate inside the potatoes. Pour two or three tablespoons of cheese mixture inside the potatoes and add some chooped herbs on top of it.
Crispy skin potatoes are soft and fit perfectly with the herbs flavored cream cheese.
